My recipe for stir fry

Chicken stir fry has become one of my favorite things to make. It's easy and you can use any type of veggies you like. Just a few simple ingredients make this a quick and tasty dinner.


Chicken Stir Fry

2 chicken breasts, cut into cubes
2 cloves minced garlic
1/2 small onion, finely chopped
1 cup baby carrots, sliced diagonally
1-1/2-2 cups frozen broccoli florets
1/2 cup honey
1/4-1/2 cup soy sauce
1 tsp garlic powder
salt and pepper to taste

Begin by sauteing the chicken in a little olive oil with salt and pepper until chicken is almost done. Add chopped onions and garlic. Add carrots and broccoli. In a small bowl, combine soy sauce, honey, and garlic powder. (You can add more or less. I just taste it to see what needs to be added.) Pour mixture over ingredients in pan and cover with a lid. Simmer for about 8-10 min over medium heat. Add more salt and pepper if needed. Serve over white or brown rice.

*Other things that you could add are baby corn, snow peas, frozen peas, water chestnuts, sesame seeds.
